Some Spanish Recipes have regional origins; for instance, Gazpacho is reputed to have Andalusian roots, Valencia is famed for Paella, while Catalonia specialises in rice dishes and seafood. However, in general, meat usually features strongly in most Spanish Recipes, lamb, sheep, pork and beef all being popular ingredients. Spain also produces some fine cheeses and there are some Spanish Recipes for non-meat dishes, including some vegetable soups and stews. Tapas form an important part of the Spanish cuisine. These are small snack type dishes usually available in cafes and bars - the most famous one is the Spanish Omelette, known as "Tortilla Espaniola", "Tortilla de Patata" or just "Tortilla", which is served cold. There is an array of Spanish recipes for this type of food and, as well as being just appetisers, a selection of tapas together can provide a main meal.
