Pasta Recipes

Pasta Recipes have been around since early Roman times, using the same basic format of durum wheat, made with semolina flour. The original versions were baked rather than boiled, which is the preparation method used in all present day Pasta Recipes. It is understood that dried pasta was introduced to Sicily during the Arab invasions of the 8th century, then spreading to the Italian mainland and by the 14th century, it had become very much in demand as it was a food commodity which could be kept for long periods of time, making it ideal for storage during long voyages. Although closely associated with Italy, Pasta Recipes have become firm favourites throughout the world, not only for nutritional values, but also because of the ability of pasta to absorb the flavours of other ingredients and sauces - particularly with the ridged varieties. Many of the clever shapes, like penne and shells, etc., can enclose some of the other items cooked with the pasta, which can include varied combinations of minced meats, mushrooms, spinach or cheese and tomato, etc. With Pasta Recipes such as cannelloni, ravioli and tortellini, the other ingredients are stuffed within a package of pasta, prior to cooking.
