Although we can easily buy so many readymade products like pies, pasties and tarts, etc., there is nothing quite like the wholesome flavour of home baked food using traditional pastry recipes. This area of cuisine is very extensive as, apart from the numerous different types of dishes you can prepare using pastry, there are also various kinds of pastry recipes to choose from. For instance, shortcrust pastry is usually selected for plate pies, which can be either savoury - such as beef or chicken pie - and for sweet items like apple or other fruit based tarts, pies and flans. However, flaky pastry recipes, also, work well for savouries such as pasties, etc. Puff pastry is similar, but is generally associated with sweet items, like jam or cream puffs and choux is mainly used for eclairs and profiteroles. The range of pastry recipes has been broadened enormously by the introduction many different styles from the continent, India and the Middle East, particularly the very thin pastries like filo and those used for samosas in which the pastry is fried to make it crisp.
