Some may refer to all desserts as puddings, but this is not strictly correct. True Pudding Recipes as we know them today are mainly for any sweet dishes cooked by steaming, consisting of various dried fruits, such as currants, raisins or sultanas, mixed together in a dough usually of suet. For Christmas Pudding Recipes, there are additional ingredients, including treacle, nuts. candied peel and rum or brandy, which make the consistency much richer. The term "pudding" can also be applied to some savoury dishes: For example, steak or steak and kidney pudding recipes are usually made with a suet dough and steamed, but the contents are cooked inside the pastry, rather than mixed together. However, Yorkshire Pudding recipes are simply a kind of batter baked in the oven and are not really "puddings" all!
