Rice is probably one of the most important food items on the planet. It has been around for thousands of years and sustains approximately two thirds of the world's population. Additionally, rice can be grown in many varied climate conditions and in almost any type of soil; consequently, our wealth of rice recipes has been greatly enhanced by the interchanges of cooking styles throughout the world, with exotic, spicy, curried rice recipe dishes particularly from China, India and other Asian regions. There are thousands of different varieties of rice, but only a few of these are familiar to most of us, like for instance: long, medium and short grain, basmati, brown and white, etc. Certain types are selected depending on the actual rice recipe - for example: white or "polished" rice is usually chosen for rice puddings. The brown product still has its bran layers, retaining the minerals and vitamins, making it the healthier option.
